The best time to harvest is determined by the optimal relationship among grape’s sugar content, and pH and acid levels. The bunches of grapes are selected within the vineyard and the time period between gathering and unloading is minimized. In the case of white grapes, they are harvested at night.
Grape harvest starts at the end of September and may continue through to the end of October. A total of 60% of grapes are harvested mechanically and the other 40% by hand. |
